About the Recipe

A nice and easy 10 minute salad that will impress friends and family with bright and fresh flavors and have them wanting more!



  • 1/2 Head of Romaine, Chopped 

  • 6-10 Cherry Tomatoes, Halved 

  • 1/4 Avocado, Sliced 

  • 1/4 Foragers Rotisserie Chicken (We love using the leg and thigh for this salad!)

  • 1/4 Cup Mozzarella, Cubed 

  • Handful of Basil, Sliced Thin 

  • Salt

  • Pepper 


  • 1/4 Cup Balsamic Vinegar 

  • 1/4 Cup Extra Virgin Olive Oil 

  • 2 Cloves Garlic, Chopped 

  • 1 Tbsp Honey 

  • Salt 

  • Pepper 


  1. Wash romaine. Once chopped add to your bowl as a base for the salad.

  2. Slice cherry tomatoes, avocado, mozzarella, and basil.

  3. Lay tomatoes, avocado, chicken, mozzarella in each quarter of the bowl. Sprinkle sliced basil and season with salt and pepper 

  4. In a measuring cup, add vinegar, oil, chopped garlic, honey, salt, and pepper. Mix well.

  5. Drizzle dressing on top. 

  6. Serve immediately and enjoy! 

*This recipe can be made ahead and finished with basil and dressing when ready to serve. It can also be scaled up to feed as many people as you need!
